INGREDIENTS
1 ½ cups of flour.
½ tsp of baking soda.
½ stp of baking powder.
½ tsp of salt.
3 eggs.
1 cup of sugar.
2 tbsps of softened butter.
1 tsp of vanilla.
1 tsp of lemon extract.
⅓ cup of lemon juice.
½ cup of oil.
You’ll Need (for lemon icing):
1 cup and 1 tbsp of powdered sugar.
2 tbsps of whole milk.
½ tsp of lemon extract.
Preheat the oven to 350° and grease a 9×5 loaf pan.
In a bowl, mix together the flour, baking soda and baking powder.
In a medium bowl, with a mixer, mix together the eggs, sugar, butter, vanilla, lemon extract and lemon juice.
Mix the dry and the wet ingredients and blend to smooth. Add in oil and mix until well blended.
Pour the batter in the loaf pan and bake for 45 minutes.
To make the icing, mix together the ingredients with an electric mixer on low speed.
Once the loaf cools, top with the icing.
Let cool completely before serving.
